Eye Round Roast

This round muscle from the round has been known to fool people into believing it was a Beef Tenderloin.  It is a delicious round roast, but will not be as tender or forgiving as a tenderloin. 

Season it well, perhaps sear it, then roast at high heat for about 15 minutes.  Reduce heat and insert a thermometer.  This roast will best when left pink in the middle.  I take it out when the temperature reaches 125.  Let it rest, slice thin, and serve.  Or chill and slice thin for cold roast beef sandwiches!
