Like all shoulders (chuck in beef, butt and picnic in pork) Lamb shoulders are great for long, slow cooking in a liquid.  Think curry or stew or simply braise it long enough for it to fall off the bone.

The bone adds nutrition and the fat and connective tissue add flavor.

Average 3 -4 lbs.
